First course: Crispy skin braised pork belly with oyster mushroom risotto and a balsamic glaze

Second course: Pork short ribs smoked with mesquite served with peach coleslaw and pickled fingerling potatoes

Third course: Suckling pig roasted with rosemary and fresh lavender, port reduction, roasted shallots, sautéed baby squash and grilled fennel seed flatbread
